Chai Spice Gingerbread
Gingerbread is a baked sweet cookie which contains ginger, cinnamon, cloves, nutmeg, cardamom and anise, sweetened with brown sugar or honey, it’s spicy aroma is reminiscent of Christmas and of a Chai Spice mixture. The dough once lightly rolled to 1cm thickness is easy to cut into various shapes ie. tree, stocking or even hearts, gingerbread houses and men. Sometimes decorated with white icing to bring out the details in relief, tied with ribbon and given as a gift with love. Our recipe uses our Original Authentic Ground Chai, which follows traditional recipes giving the spicy uplifting aroma and taste.
Ingredients
2 cups almond flour
1/4 cup coconut flour
1/2 tsp baking soda
2 tsp vanilla extract
1/4 cup honey
1/3 cup melted butter
2 tablespoons Chai Spice Original Authentic Ground Chai
Method
Preheat oven to 175 degrees Celsius (350 degrees Fahrenheit)
Place all of the ingredients in the bowl of an electric mixer and combine
Once the dough is fully mixed, form into a ball and place on a large sheet of baking paper
Place another sheet of baking paper on top of the dough and roll out with a rolling pin until the dough is approximately 1cm thick
Using a cookie cutter cut out shapes. If the dough feels too soft place it in the fridge for approximately 15-20 minutes
Place the cookies on a tray lined with baking paper and bake for 8-10 minutes or until the cookies turn a golden colour
Remove from the oven and allow to slightly cool before moving. Option to dust lightly with icing sugar. Store in an air tight container
